It has to be a "hot" dish for some reason. Any easy overnight crockpot ideas or something like that. I drive an hour to work so I would rather it be something I don’t have to get up at 3 a.m. to cook. Just something that is good for a Christmas party and easy to make with not a lot of ingredients.

This recipe makes the best cocktail meatballs. My sister and I bring them to our work potlucks each year and they go very fast.
3 large bags meatballs
2 16oz cans cranberry jelly (the ocean spray stuff)
2 jars of chili sauce
4 tablespoons brown sugar
3 teaspoons lemon juice
sprinkle red pepper flakes
In a slow cooker or large sauce pan over low heat blend all the ingredients together and simmer for 1 hour or until warm
Keep warm at the party.

You cannot go wrong with the famous green bean casserole. Most everyone loves it and it is SUPER easy to make (and very cheap).

Shoepeg corn casserole will be the hit of the party !!Or Candied yams, Or homemade mac/cheese.
Very Very easy and not to much money and they will love it, I guarantee!
Get any of these recipes ready & put it in the crock pot before you go to bed, just carry the crock pot to work & plug it up, it will cook till dinner and be delicious!
TIP: Get the right size box & it will be easier to carry the crock pot in to work no spillage!.
Shoepeg Corn & Green Chile Casserole

3 3/4 tablespoons butter
1 cup onions, diced
3 3/4 (12ounce) cans white shoepeg corn
3 3/4 (4ounce) cans diced green chilies
15 ounces sour cream
30 ounces monterey jack cheese, shredded
salt
pepper, to taste
1. Melt butter in a large sauté pan on medium heat.
2. Add onions and sauté until translucent.
3. Add corn and green Chiles (including juices), stirring until warmed through.
4. Stir in sour cream, Monterey Jack, salt& pepper and mix well until cheese just starts to melt.
5. Transfer to crock pot, cook on HIGH for 3 or more hours may need to turn down, depending on your crock pot!

chili con carne usually goes down well, you can serve it up with tortilla’s instead of rice. Always tastes better slow cooked, too!!

caramel-pecan bread
For the Dough:
PROOF:
1 packet (2 1/4 t.) active dry yeast
1 c. warm water (100-110 degrees)
WARM; ADD:
3/4 c. whole milk
1/2 c. buttermilk
3 T. sugar
2 T. unsalted butter, room temperature
5 c. all-purpose flour, divided
1 1/2 t. kosher salt…okay I am on a kosher kick. Regular salt is fine.
FOR THE FILLING—
SOFTEN AND BLEND:
3/4 c. unsalted butter, room temperature
1 1/4 c. sugar
1/4 c. cinnamon
TOAST AND CHOP:
1 1/2 c. pecans; divided
For the Caramel Topping —
COMBINE; ADD:
1 1/2 c. brown sugar
1/2 c. heavy cream
1/4 c. pure maple sytrup
1 T. bourbon
1 t. kosher salt (I know, again with the Kosher salt – you can use regular salt)

Directions
BUTTER A 12-cup Bundt pan; set aside.
PREPARE dough and filling.
PROOF the yeast for the dough in warm water in the bowl of a stand mixer for 5 minutes, or until foamy. (You can proof in a regular large bowl to do this recipe if you do not have a stand mixer but your arm will fall off working the dough.)
WARM the milk to 100 degrees in a saucepan over low heat while yeast is proofing. Add warmed milk, buttermilk, 3 T. sugar, 2 T. butter, 3 1/2 cups flour, and salt to the proofed yeast. With a paddle attachment, mix on low speed until combined, then increase speed to high; beat for 2 more minutes.
SWITCH to the dough hook and add the remaining 1 1/2 cups of flour. Mix on low speed until incorporated, then increase speed to medium. Mix for 5-7 minutes, or until dough pulls away from the sides of the bowl. (It will still be stuck to the bottom of the bowl, so don’t worry.) Cover bowl with plastic and let dough rise in a warm place for 1-1 1/2 hours, or until doubled. Butter two 9" square pans. (I know, 9" is not a regular size that many have but it is better just because they get BIG)
SOFTEN 3/4 cup butter for the filling in a bowl in a microwave for 30 seconds. Use a hand mixer to blend in the sugar and cinnamon; set aside (do not chill).
TOAST pecans in a nonstick skillet until golden and fragrant; chop and set aside. While dough rises make caramel topping.
COMBINE brown sugar, cream, maple syrup, bourbon, and salt in a saucepan. Bring to a boil over medium-low heat (DO NOT STIR, and keep an eye on it–there’s a tendency for it to boil over).
Simmer for 10 minutes, then pour 1 cup caramel into the prepared Bundt pan. Set aside.
ONCE the dough has risen, hook your fingers under the edges to release the dough from the bowl. Scrape it onto a well-floured surface, sprinkle flour over the top, and press gently to remove air bubbles. Divide the dough in half and roll one portion into a 10 x 16" rectangle.
SPREAD half of the filling onto the dough,and sprinkle with 1/2 c. pecans, pressing them lightly into the dough. Cut each rectangle into thirds and roll the rectangles long ways – jelly-roll style- into logs. (Remember that you want minature cinnamon rolls to pile on top of each other in the bundt pan.)
TRANSFER to a baking sheet, freeze 10 minutes, then slice into 1" rolls with a serrated knife.
ARRANGE rolls in the prepared pan in circles, building two layers. (Another words, pile the minature cinnamon rolls on top of each other all the way around the Bundt pan.) Cover with foil that’s been coated with non-stick spray, then let rise for 1 hour; preheat oven to 350 degrees. Bake bread, covered with foil, for 30 minutes, then remove foil and bake an additional 25-30 minutes. Allow the bread to rest for 15 minutes.
MEANWHILE, bring the remaining caramel to a simmer, then add the remaining 1/2 c. pecans. Invert bread onto a plate, then drizzle with caramel.
A LONG PROCESS, but great eating. Soo many people enjoy this when I make it. I love the aroma I get in the whole house. Yum!

What about a Chilli,Cook some Mince Beef,add Tomatoes,kidney beans and all spices etc,serve with Tortilla Chips.Easy!And you can put this on over night slowly.

Chili is nice and easy…and you can take a bag of Taco Chips along with the crock pot to work…some shredded cheese that you add at the last moment will make it look nice! Have a wonderful time! Merry Christmas!

Greenbeans, corn, broccoli rice & cheese casserole, or chili. Just cook your dish the previous night and then plug up your crockpot as soon as you get into work. It should heat up by then.

Seriously though try twice baked potatoes, this seems to be a favorite and it easy as well twice baked potatoes.
Boil potatoes for 45min, until cooked but not too mushy.
Mash the potatoes
Whip the potatoes with some butter and/or sour cream
Add cheese, peppers, onions, the kitchen sink, whatever!
Plop the entire mass into a baking dish and bake for an hour or put into individual baking cups, cupcake cups, and top with more cheese and bake for 45min.
Two hours of your time and the office will stare at it funny until someone takes the plunge and takes the first bite and then it will be gone!

Meatballs. Buy a package of pre-made meatballs, a 12oz jar of grape jelly, and a container of hot sauce. Mix the jelly and hot sauce, add the meatballs, and stick them all in the crock pot to warm up and stew. Huge hit whenever I make it, and it’s so darn easy. Sounds like it wouldn’t work- grape jelly and hot sauce, but it’s really good. Doesn’t taste like grape jelly at all when it’s done.

Sweet & Sour Meatballs or Kielbasa …………cut up kielbasa and add BBQ sauce & jelly in a crock pot. Or, put meatballs ketchup & jelly in a crock pot. Once you get to work plug it in and let it cook until time for the party.

Smoked Sausage Crock Pot Heinz 57
1 bottle Heinz 57 steak sauce (small)
1 can jelled cranberry sauce
2 tablespoons brown sugar
3 lbs sliced smoked sausage
Brown sliced smoked sausage. Melt steak sauce, cranberry sauce and brown sugar in a saucepan over medium heat until smooth. Place meatballs in crock-pot, pour mixture over and place the crock-pot on low. Excellent!

Jar of favorite barecue sauce
Little smokies
Place both in crock pot and heat thoroughly. Supply skewers or toothpicks and allow people to enjoy. Since it doesn’t have to cook completely, it doesn’t take all night and it seems to be a crowd pleaser.
Another idea.
Chicken sandwiches
Can of shredded chicken
Pickle relish
Packages of hamburger buns
Heat chicken in crockpot until hot. Serve as chicken sandwiches and allow people to add their own relish.
If you like to cook, you could make any of the stew or soup type of foods before and then just reheat.
